These Vietnamese spring rolls are so refreshing, colorful, and fun to make. These fresh rolls are made up of rice paper rolls and crunchy veggies. They are super quick rolls and perfect for enjoying outdoor picnics. I love to make these rolls along with my daughter, these rolls are so versatile you can fill anything that you enjoy the most like berries, peaches, veggies, crispy shrimps. In my family, everyone loves to create their own rolls according to their likings and is sometimes an amazing family activity that you can enjoy together.

Ingredients for salad rolls

  • 25g rice vermicelli noodles
  • 6-7 rice paper sheets
  • 1/2 green/ red bell pepper, julienned
  • 1 carrot, julienned
  • 1 cup shredded red cabbage
  • 1/2 cucumber, thin strips
  • Fresh lettuce leaves
  • 1 tbsp sesame oil
Ingredients for peanut sauce
  • 1/4 cup peanut butter
  • 1 tsp sauce siracha
  • 1/2 lemon juice
  • 1 tsp honey
  • 1 tsp soya sauce




Directions

  1. In a medium-size pan, add 1 glass of water, place it on medium heat. Add the rice noodles to boil ( boil for about 6-7 minutes) drain and rinse under cold water and toss the noodles with a tablespoon of sesame oil.
  2. Take a shallow pan, add 1/4 cup of lukewarm water, then soak one sheet of rice paper for about 10 seconds or until slightly softened. ( do not soak over otherwise rice paper will break)
  3. Remove the rice paper from the water and place it on a wooden round board, now start assembling a roll with veggies, lettuce, and noodles on the edge of the rice paper sheet. ( Do not fill with lots of things)
  4. Wrap the salad roll like you would do to make a burrito. Fold the lower edge up over the fillings and finally close the ends.
  5. You can cut it in half and serve it with creamy peanut butter sauce.
  6. Peanut butter sauce recipe- Combine peanut butter, sauce sriracha, soya sauce, lime juice, and honey. Mix well. and serve with fresh spring rolls.
