   It's Fall! It's Diwali! you guys it's my all-time favorite season because of the colors, fun, and fabulous eats and I'm so thrilled to share this recipe with everyone.

 Though, away from home is pretty much make you ridiculously nostalgic for all of your favorite comfort food and especially Diwali sweets. I'm really fond of amazing Indian sweets especially 'KAJU KATLI'.

Since I moved to France it's not easy to get all those delicacies, so this year I have made some special pumpkin bars with cream cheese frosting. Guys, believe me, it's so so good! The specialty of these bars is pumpkin spice which makes them extra delicious and once the bars are topped with a generous spread of cream cheese is MAGICAL!






These are the best bars that I have ever made so far. These bars with an amazing spiced pumpkin flavor are super moist and tangy with lemon frosting.

I've tried some amazing pumpkin recipes like pumpkin soup, pumpkin bread, muffins, parathas, etc. all of which have been delicious but one of my absolute favorite is pumpkin bars with cream cheese.


Let's celebrate this Diwali with these cute pumpkin bars.

Ingredients

Pumpkin puree

  • 350 g spelt flour / all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • 2 tsp pumpkin spice
  • 1 tsp vanilla extract
  • 2 cups pumpkin puree( fresh/canned)
  • 1 cup unsalted butter/coconut oil
  • 1 cup granulated white sugar/ coconut sugar
  •  milk if required
  • 1 tsp cinnamon 
  • Philadelphia cream cheese 125 g

Method


  • Whisk wet ingredients: In a large mixing bowl, whisk together the sugar, coconut oil, pumpkin puree, vanilla extract until well combined.
  • Whisk dry ingredients: In another mixing bowl, mix flour, baking powder, baking soda, salt, cinnamon, pumpkin spice, until well combined.
  • Mixing: Mix the dry ingredients into the wet mixture and stir until well combined.
  • Baking: pour the batter into the prepared baking tin and spread it out in an even layer. Bake for 35-40 minutes or until the toothpick comes out clean.


  • Transfer the baking tray to a wire rack and cool down completely
  • Cream cheese frosting: In a mixing bowl add in cream cheese, 1/2 cup sugar, and 1/2 lemon juice. Mix until creamy and shiny.
  • Spread a layer of cream cheese frosting and serve hot or cold.
  • If you like cold desserts then keep it in the refrigerator for 1-2 hours before serving.



Enjoy this Diwali with delicious pumpkin bars, grab your baking pans and lots of pumpkins and whip up a batch of these bars as soon as possible. 
These bars are ideal for Halloween party or Thanksgiving too.




Tips

  1. Pumpkin spice - instead of buying you can also prepare pumpkin spice at home in a grinder add some cloves, pepper, cinnamon, nutmeg and grind in a powder form)
  2. Pumpkin puree- Instead of buying you can make fresh pumpkin puree in minutes. Just grab half a piece of pumpkin and place it in a microwave for 6 minutes until soft. them scoop the soft part and put it in the mixer blender.
