Hey! I am back with Banana blueberry loaf cake. Sometimes a good old classic will hit the spot and old fashioned banana loaf is always a delicious recipe, perfect for the festive season but can absolutely be enjoyed any time of year.
In this recipe, I am using spelt flour instead of all-purpose flour.
Why I use Spelt flour?
I always prefer healthy stuff in my pantry. Recently, I found spelt flour is a very healthy substitute of all-purpose flour because it is an excellent source of Calcium, magnesium, zinc, iron, vitamins, and B-complex. It also improves the immune system.
Loaf cake is such an easy delight and so versatile. You can grab it whenever you want, it could be a breakfast served with a cup of hot coffee, yummy dessert served with fresh berries /cream cheese or as an evening snack.
Today I am sharing an exotic Banana blueberry loaf with all the nutritious ingredients like Spelt flour, over-ripped banana and fresh blueberries.
Just look at them! how soft and spongy they are?
They are so satisfying with fresh berries!

INGREDIENTS
- 500 g spelt flour
- 1 cup fresh blueberries or (frozen berries)
- 2 over-ripped mashed bananas
- 1 cup (125 g) unsalted butter or coconut oil
- 1 tsp vanilla essence
- pinch of salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup soya milk or any other milk
- 80 g coconut sugar
Instructions
- Preheat the oven at 180° C. Prepare the baking tin with parchment paper or grease it with butter.
- In a large mixing bowl, mix all the dry ingredients ( flour, baking soda, baking powder, salt)
- Heat the butter or coconut oil for few seconds( lukewarm), add in coconut sugar and mix until dissolved.
- Mix wet ingredients( milk, oil, sugar, over-ripped mashed banana) into dry ingredients. Mix well.
- Pour the batter evenly and add in fresh berries in between then add the remaining batter on the top. (Berries in the center so that it does not burn)
- Baked for 45 minutes at 200°C.
- Check with the help of toothpick if it comes out clean then remove the baking tin and keep it aside to cool down completely on a wire rack.
- Now, with the help of spatula take out the loaf and keep it in the refrigerator for 1-2 hours for better taste.
- Serve a beautiful slice with fresh blueberries.
