Why am I posting vegan recipes? Am I vegan? Well, I'm an omnivore, but my 80% diet is a pure vegetarian or vegan and I love to eat different types of food and cook fresh vegetables, lentils in a delicious way, keeping in mind the most fundamental reasons to incorporate more veggies in my diet are environment, health and economy. Recently, I read an article in the journal that we shouldn't eat meat, poultry, and fish at least once a week to reduce our impact on the environment.

 So I've already started consuming less meat and more fresh fruits and vegetables, and I would highly encourage you all to eat more and more vegetables.

I'm pleased to share all amazing simple vegan or vegetarian recipes that will definitely satisfy your taste buds.

Here I'm presenting the quick snack recipe of Hara Bhara Matar kebabs/Green peas Kebabs - which is vegan, gluten-free, hassle-free and, of course delicious!


Recipe of Vegan Matar Kebabs

Ingredients
  • 2 cups boiled green peas
  • 2 tbsp semolina
  • 3 tbsp rice flour
  • 1 tsp coriander powder
  • 1 tsp crushed peppercorns
  • Pinch of asafoetida
  • 1 tsp tamarind powder
  • 1 tsp ginger garlic paste
  • 2 tbsp olive oil 
  • Salt to taste

Directions



  • In a large mixing bowl, add boiled peas and with the help of a masher, mashed the peas.
  • Add ginger-garlic paste and all the dry ingredients except oil.
  • Mix well until well combined and form a nice dough.
  • Now, take a small portion of pea mixture onto your palm and form a round patty.
  • Place the non-stick frying pan on medium heat and add olive oil to shallow fry.
  • Then place the pea patty one by one onto a pan ( place at least 4 at a time) and shallow fry until golden brown from both sides.
  • Serve these gorgeous hot kebabs along with tomato ketchup, cilantro dip/ Hari chutney.




Tips and suggestions

  • Airfryer- If you are health conscious and avoid greasy snacks then you can use air fryer instead of shallow fry.
  • Deep-fried-  you can also deep fry these kebabs but it will enhance the flavor as well as calories ;)
  • Green peas- If you don't like peas you can substitute with potatoes, spinach with potatoes, if you like tofu you can also grate tofu or paneer/cottage cheese for extra flavour. The options are endless you can customize as you want.
