Zucchini aka courgette in french. When it comes to green vegetables I like zucchini very much it is so juicy and crunchy rich in fibre, vitamin A & C. Zucchini have been popular in Europe for several years especially Round zucchini/ Courgette ronde

What are round zucchini called?

It comes in a different colour, shapes, and sizes. It is a long cylindrical vegetable comes in yellow, light green, dark green colour. New varieties include golden zucchini and the globe or round zucchini which is mild in taste. The best season for zucchini is from May to August. 

I bought some round zucchini from the organic market and they are so darn cute - perfect for stuffing. I love to stuff them with finely chopped vegetables cooked in the tomato puree and filled zucchini balls with lots of cheese. It is a delicious side dish that you can serve with salad or chicken fillet. I firmly believe that round zucchini are made for delicious and hearty stuffing.

How to bake round zucchini?

Today I'll share some tips on how to make a delicious stuffing and how to bake these yummy zucchini bombs. Also, I'll share some tips about how to use the zucchini flesh that you will get when hollowing out the zucchini.

How to make stuffing for stuffed zucchini? 

There are various options that you can create with little imagination.
  • Vegetable filling-  if you are vegetarian you can make hearty vegetable stuffing with a variety of finely chopped vegetables like onion, garlic, carrots, mushrooms, spring onion, boiled potatoes stir fry in the tomato puree and fill this stuffing along with cheese of your choice.
  • Meat stuffing-  if you are non-vegetarian you can use minced chicken, turkey, ground beef which is the traditional way to make french stuffed zucchini.
  • Vegan filling- if you are vegan you can use tofu or tempeh and make a delicious filling.

Stuffed Round Zucchini Recipe

Ingredients
  • 2 medium round zucchini 
  • 3 รฉchalote finely chopped (or onion)
  • 2 minced garlic
  • 1-inch minced ginger
  • 1 cup flesh of zucchini that you get while hollowing round zucchini.
  • 1 boiled mashed potato
  • 1 cup tricolour chopped bell pepper
  • 1tsp oregano
  • 1 tsp rosemary ( Herbs de Provence)
  • 3 tsp olive oil
  • Freshly ground pepper ( according to your taste)
  • 1 tsp fine sea salt or any other salt accordingly
  •  Parmesan cheese for garnishing (optional)
  • 3 tsp elemental cheese or any grated cheese easily available in your country.

Instructions

How to cut and bake round zucchini?


  • Preheat the oven to 200°C
  • Cut the hat off the top of each zucchini, and carefully scoop out the flesh with the help of a sharp-edged spoon, reserve the centre flesh for stuffing.
  • Put the zucchini shells in a prepared baking dish and filled with a glass of water. Drizzle with olive oil, salt and pepper and bake for about 15 minutes. This will make zucchini more juicy and delicious.

  • Meanwhile, place a large skillet on medium heat, add in 2 tsp olive oil, minced garlic ginger paste, chopped onions, mashed potato, chopped bell pepper, stir until soft and mushy.
  • Add in all the dry herbs, salt and pepper. Keep it aside until cool down completely.
  • Now, take out the baking tray and stuff the zucchini in layers, firstly add grated cheese then a layer of vegetable filling, repeat the process until the zucchini filled completely.
  • Place the zucchini in a baking dish and add more cheese and cover with the sliced top of round zucchini.
  • Cook for 45 minutes or until tender and the filling is golden brown.
  • Serve hot as a side dish along with a piece of garlic toast. Just delicious!
