What is Sushi?


Sushi is a Japanese food consisting of cooked vinegared flavoured cold rice ( Vinegared rice is sticky rice seasoned in sugar and vinegar) served with various amazing ingredients like colourful crunchy veggies, exotic fruits, and seafood. Sushi Yama

How do I know?


Today is dedicated to sushi lovers! I'm not a huge fan of raw seafood, the first fish meal that I had in Venice (Italy)  was amazing it tastes like a "Baigan ka Bharta" to me I liked it so much, the second time I had Japanese sushi and now I'm a sushi lover I like Rainbow sushi that I love to make at home and California sushi rolls that I usually order in a restaurant! I like to eat sushi with spicy chilli sauce Siracha,  soy sauce, ginger pickle, and wasabi just outstanding.

Making sushi at home with your favourite filling is really easy and fun, healthy and cheap. It is vegetarian and gluten-free made of sushi rice( sticky rice) in just 20 minutes. You can make your perfect custom roll. They are amazing!

I have learned to make sushi because of my daughter! she loves sushi a lot ( My Japanese doll), during lockdown situation my daughter was missing sushi very much and I made Rainbow sushi to make her happy and she was surprised:)
It looks fancy and tricky at first but believes me a lot of ingredients like nori sheets, sushi rice, and vinegar will stay a long time in your pantry and you can enjoy delicious sushi boat whenever you want and is way better, healthy, fresh and of course economic.

HOW TO MAKE RAINBOW SUSHI AT HOME?

Ingredients

  • 2 cups sushi rice rinsed and drained.
  • Nori sheets(dried, roasted seaweed).
  • 2 cups of cold water
  • 1 tbsp of sesame seeds (toasted).
  • 1tbsp of black sesame seeds( optional).
  • 1/2 red bell pepper, sliced lengthwise.
  • 1/4 cucumber cut into thin strips.
  • 1/2 carrot cut into thin strips.
  • Bamboo mat or any bamboo calendar or parchment paper. ( For making a sushi roll).
  • 4 tbsp white vinegar. ( 1/3 cup of vinegar)
  • 2 tbsp sugar
  • 2 tsp salt
  • Sriracha hot chilli sauce/ soy sauce

Directions


  • Wash the rice with cold water until the water runs clear. Drain well.
  • Put drained rice in a heavy saucepan and add 2 cups of cold water, white vinegar, sugar, and salt. Cover tightly and set the pan over high heat to medium and cook until all the water is absorbed (7-8 mins).
  • When rice totally absorbed water then remove from the heat and stay aside for 15 minutes. Then transfer the hot rice in a large bowl.

  • Take a Bamboo sushi mat (I didn't find a bamboo mat; so I used Bamboo calendar) or you can use parchment paper.
  • Take one nori sheet and place it in the centre of the bamboo mat.
  • Now spread a generous amount of sushi rice onto the 1/2 sheet of nori and use your hands to spread the rice evenly over the entire surface of the nori ( apply a little amount of sesame oil on your palm to prevent your hands from sticking rice.
  • Arrange thin slices of bell pepper, carrots, and cucumber across the centre of nori sheet lengthwise ( don't fill too much otherwise it will break).
  • Start rolling using your bamboo mat to firmly keep the roll in place. Apply little pressure to make a tight roll.
  • Once the roll is complete sprinkle with toasted sesame seeds.
  • Now, Cut sushi roll into pieces with a sharp knife.
  • Serve with chilli sauce/soy sauce/wasabi.

Tips
  • To cut sushi use sharp knife and after cutting each slice wipe your knife with a paper towel or maybe a dip in water to avoid sticking.
  • If you are using bamboo mat cover your mat with plastic wrap so that you can use several times.
  • If you don't have bamboo mat use bamboo calendar or parchment paper.
  • Apply a little bit of sesame oil to avoid sticking.
  • You can directly cook sushi rice with vinegar and sugar it will taste the same and save time.
