RATATOUILLE - Traditional French Dish

If yes, then Ratatouille is a very popular and comforting French dish that is made up of zucchini, bell peppers, eggplants, and tomato puree.
During this difficult time period around the world Covid-19 situation, it's very hard to manage work, children, and cooking all together at home.
I would like to ease your life by sharing quick recipes that you can enjoy with your family and served with plain rice. As I know people are stocking a lot of rice including me. This will definitely help you out.
Today I'm sharing a very colorful french dish called Ratatouille. Have you heard this name before? Have you seen an American animated movie called Ratatouille?
In France, Ratatouille is typically well known and is cooked on the stove or in the oven. It is a very easy vegan dish that can be prepared in one pot in just 15 minutes only.
The beauty of this meal is - it contains magical vegetables that are cooked separately in a tablespoon of olive oil until properly tender and each vegetable produces its own flavor. Yummy! This step is essential and is a trick of this recipe, if you add all vegetable together it will become Baingan ka Bharta😀
My daughter loves this dish, although she does not like vegetables much, whenever she finds Ratatoullie in her canteen menu, she enjoys her meal.
What is Ratatouille?
Ratatouille is a classic combination of colorful vegetable stew, cooked in olive oil and dried herbs from Provence.
Generally, it is a summer vegetable stew, but you can enjoy it anytime because it contains all the basic vegetables that you get throughout the year.
How do I know?
When I moved to France, I was kind of vegetarian, As we know it's always difficult to change eating habits immediately, it always hard for me to find vegetarian (something that I like) especially on vacation in Europe. Ratatouille is the first-ever vegetarian dish that I had in Provence was Incredible! It was so bright, colorful, nutritious served with crust baguette.

Recipe of Ratatouille?
Servings - 4
| OLIVE OIL + TOMATO PUREE |
Ingredients
- 1 medium eggplant/ Aubergine ( cut in a square)
- 1 green zucchini ( cut in square shape)
- 1 yellow zucchini ( if available)
- 1 cup Bell peppers ( green and red)
- 1 large onion roughly chopped
- 3 minced garlic cloves
- 2 cups of tomato puree/tomato pulp ( canned or homemade)
- 2 tsp dry thyme
- Fresh basil leaves
- 4-5 tbsp olive oil
- Salt and pepper to taste
How to make Ratatouille?
DIRECTIONS
- On medium heat, place a large non-stick pan.
- Add 1 tbsp of olive oil then add chopped aubergine cooked until caramelized ( lightly brown).
- Remove the eggplants on a clean plate. Add a tablespoon of oil again with chopped zucchini and bell peppers together/ separately until brown. Keep it aside.
- Add olive oil with minced garlic, onions stir until brown.
- Add tomato puree stir and mix well. Add a little salt.
- Now, add one by one all the caramelized vegetables and fold gently.
- Add thyme, salt, and pepper to taste.
- Lastly, add fresh basil leaves and serve hot along with rice, baguette or multi-grain bread.
SERVING SUGGESTIONS ARE ENDLESS
- Bread, eggs, meat, rice, quinoa, couscous
Notes:
- Cook each vegetable separately until caramelized.
- Prepare a big batch and enjoy the next day as well.
- Use Store-bought tomato puree for a nice color.
- Use extra virgin olive oil for authentic flavors.
