Vanilla doll cake | Moist-layer cake

As I mentioned, on my Instagram, Facebook that this is my first doll cake and I never made this before. I tried, because of my darling daughter, she asked me "Mum can you bake a Barbie cake for my birthday."😊💋

Ingredients Preparation time: 2 hours
- 500 g all-purpose flour
- 1/2 tsp salt
- 4 tsp baking powder
- 150 g unsalted butter (at room temperature)
- 400 g sugar(if you are using fondant then better to use less sugar 300 -350 g)
- 1/2 cup olive oil
- 1 tbsp vanilla extract
- 4 large eggs
- 250 ml of milk
- 1 tsp baking soda
- 1 cup orange juice or sugar syrup
- 2 packet fondant (any color)
Vanilla Frosting
- 1.5 cups unsalted butter
- 125 g mascarpone cheese (Italian cheese) substitute (heavy whipping cream)
- 1 tbsp vanilla extract
- 100 g confectionery sugar
Directions
- Prepare two cake pans one 8 inches round and another like shown in the above picture with parchment paper circles in the bottom and grease the sides.
- Preheat oven to 180 °C.
- Combine the flour baking powder, baking soda, and salt in a medium-sized bowl. Set aside.
- Add butter, sugar, oil and vanilla extract in a large mixing bowl, beat together until fluffy & light in color for about 3 -4 minutes.
- Add 4 eggs one at a time mix until combined well. Scrape down the sides of the bowl to make sure that all ingredients are well incorporated.
- Add half of the dry ingredients to the batter until combined.
- Slowly add milk and mix until well combined, add the remaining dry ingredients until smooth. Do not over mix batter.
- Divide the batter evenly between the cakes pans and bake for 22-25 minutes or until a toothpick comes out dry.
- Remove the cakes from the oven and allow to cool for about 3 to 5 minutes, then remove to cooling racks to cool completely.
- To make the frosting beat the butter until smooth and light in color and slowly add icing sugar, now add mascarpone cheese, slowly add sugar and beat until smooth, shiny and creamy until well combined.
- Add vanilla extract, beat for 2-3 seconds.
- Now take the cake bases and cut them into half then to moist the cake use a sugar syrup or any juice on the top of the base and put them back in the refrigerator for about half an hour.
- Take out your cake bases and spread about I cup of frosting evenly on the top of the cake.
- Add the second layer of the cake and another cup of frosting. Repeat the process.
- Now Roll fondant as big as possible in a round shape and cover your first base with fondant. Repeat the same procedure with the doll base and cover it with fondant.
- Use a barbie doll (undress) and wrap it in a thin fresh film that we use to wrap vegetables and insert them in the cake. Now cover the doll with fondant and decorate it with golden pearls.
- Decorate your cake with golden pearls.
